I think the Evil Queen does not know love. In Episode 2 they talk about unbridgeable hole, and she missing to love someone, anyone! I think that she want to love someone, but she does not know how to do. So she loves Henry as an object, the only thing she can do.
I think that the curse has struck her more than others, the other fairy tale characters, at the end of things, always have a hope, while for the Evil Queen this is her last chance, and things are not going as she wanted.
